Filipino BBQ

Ingredients

Marinade:

  • 1 cup soy sauce
  • 1/2 cup vinegar (can substitute with 1/4 cup lemon or calamansi)
  • 11/2 cup sprite
  • 12 cloves minced garlic
  • 1 small onion ,finely chopped
  • 1/2 cup brown sugar
  • Optional: Cracked Pepper to taste
  • Optional: 1 T sesame oil

Protein:

  • 1-2 kg pork or chicken pieces.

Basting Sauce:

  • 1 cup reserved marinade
  • 2 T Oil
  • Optional: 4 T Banana Ketchup

Directions

  • Make the marinade. Reserve some marinade for a basting sauce later.
  • Marinate pork or chicken for a minimum of 4 hours, but best if overnight (8-12 hours). Cover and refrigerate.
  • Soak bamboo skewers in water for 30 min to prevent burning. Thread marinated meat onto the skewers. (It isn’t always necessary to skewer the meat, e.g. if grilling chicken wings)
  • Simmer the Basting Sauce: In a small saucepan, combine the reserved marinade, oil, and (optional) banana ketchup. Bring the mixture to a gentle simmer over low-medium heat, stirring until the sauce has thickened slightly. Remove from heat and cool.
  • Grilling: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 2 minutes per side to start the cooking process. Begin basting the skewers generously with the prepared basting sauce every time you flip them.
  • Continue grilling, flipping, and basting until the meat is fully cooked and has developed a deep, caramelised, sticky glaze.
Variation
  • Add 1 cup pineapple juice, highly recommended if the protein is pork or beef.
  • This becomes a “Quick Cook” instead of a “Leisure Cook” if you have already marinated overnight and you opt to cook in the air fryer instead of the grill. These are the cooking instructions if you are making this recipe with chicken wings:
    • Place in the air fryer on 180oC for 15 min, basting after 8 minutes.
    • Flip the wings and continue cooking for another 15 min – again, basting after 8 minutes.
