Choc chip cookies

Ingredients

  • 170g butter
  • 170g brown sugar
  • 50g white sugar
  • 1 large egg yolk
  • 1 whole egg
  • 1T vanilla
  • 210g plain flour
  • 3/4 t baking soda
  • 1 t salt
  • 2 cups semi-sweet chocolate chips or 227g chopped high quality dark chocolate
  • Optional: sea salt

Instructions

  • Heat 170g butter in a steel pot, on low heat on stove top. It will start to bubble then eventually turn to a golden brown colour.
  • Remove pot from heat and add 170g brown sugar and 50g white sugar. Mix until combined.
  • Add 1 large egg yolk, 1 whole egg, and 1 T vanilla.
  • Mix dry ingredients: 210g plain flour, 3/4 t baking soda, and 1 t salt.
  • Add to wet mixture and mix with a spatula until combined.
  • Add in choc chips or chopped chocolate,
  • Use an ice-cream scoop to measure out cookie dough. Roll with your hands.
  • Place on baking sheets and refrigerate. Chill cookies for at least 30 mins.
  • Preheat oven to 180oC if conventional oven or 160oC if using a fan-forced oven.
  • Bake for 11-12 minutes.
  • Optional: sprinkle a bit of sea salt on cookie.
