Garlic-Butter Soy Mushrooms

Ingredients

  • 250g mushrooms (sliced thick—about 5mm)
  • 2 cloves garlic (finely minced)
  • 1 tbsp butter
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp cooking oil
  • Garnish: Black sesame seeds and finely chopped green onions.

Directions

  • Heat pan with the cooking oilon medium-high heat.
  • Add the mushrooms in a single layer if possible. Do not stir them yet -you want a dark, golden-brown crust to form.
  • Once the mushrooms are browned and have shrunk slightly, turn the heat down to medium.
  • Add the Garlic and the Butter. Stir constantly for about 30–60 seconds. The butter will foam and the garlic will become fragrant without burning.
  • Pour in the Soy Sauce and the Mirin. These liquids will bubble rapidly.
  • Let the liquid reduce until it becomes a sticky, glossy glaze that clings to the mushrooms.
  • Toss in the black sesame seeds.
