Ingredients
- 250g mushrooms (sliced thick—about 5mm)
- 2 cloves garlic (finely minced)
- 1 tbsp butter
- 1 tbsp soy sauce
- 1 tbsp mirin
- 1 tsp cooking oil
- Garnish: Black sesame seeds and finely chopped green onions.
Directions
- Heat pan with the cooking oilon medium-high heat.
- Add the mushrooms in a single layer if possible. Do not stir them yet -you want a dark, golden-brown crust to form.
- Once the mushrooms are browned and have shrunk slightly, turn the heat down to medium.
- Add the Garlic and the Butter. Stir constantly for about 30–60 seconds. The butter will foam and the garlic will become fragrant without burning.
- Pour in the Soy Sauce and the Mirin. These liquids will bubble rapidly.
- Let the liquid reduce until it becomes a sticky, glossy glaze that clings to the mushrooms.
- Toss in the black sesame seeds.
