Salad Sandwich
Ingredients
- Fresh, quality bread
- Butter, softened
- Cheese slice(s)
- Grated carrot
- Avocado slices
- Optional: a light squeeze of lemon or lime juice
- Cucumber
- Tomato
- Salt and pepper seasoning
- Crunchy lettuce (for e.g., iceberg or cos lettuce)
Directions
- Butter the Bread: Spread butter generously on both slices of bread, right to the edges. Don’t skimp on butter as it acts as a protective layer for the bread, preventing sogginess, and adds a necessary fatty richness that binds the fresh flavours. Use softened butter that spreads easily right to the edges of the bread.
- Add Cheese: Lay slices of your favorite cheese on one slice.
- Grate Carrot: Spread the grated carrot evenly over the cheese.
- Avocado Slices: Add thin slices of avocado on top of the carrot.
- Season Veggies: Layer the finely sliced cucumber and tomato. Season the tomato generously with salt and pepper.
- Lettuce Last: Top with a generous stack of crunchy lettuce leaves, which provide texture and volume.
- Close and Cut: Place the second slice of buttered bread on top, press gently, and cut the sandwich diagonally in half.

Add a Tangy Spread (Optional): While butter is classic, adding a thin layer of mayonnaise, a little Dijon mustard, to the lettuce and cucumber can elevate the flavour profile significantly.
