Pat your salmon fillet bone-dry with a paper towel.
Heat a splash of oil in a pan over medium-high heat. Place the salmon skin-side down. Press it gently with a spatula for 30 seconds to ensure a flat, crispy skin. Let it sear for 3–4 minutes.
While it sears, whisk together:
1 tbsp Soy Sauce
1 tbsp Mirin
1 tbsp Sake (or water)
1 tsp Sugar
1 tsp Fresh Grated Ginger
Flip the salmon. Pour the glaze into the pan. It will bubble and reduce rapidly. Tilt the pan and spoon the thickening sauce over the fish until it’s dark, glossy, and sticky. Remove the fish to rest.
