Garlic-Lemon Broccoli

Ingredients

  • 1 large head of broccoli (cut into bite-sized florets)
  • 3–4 cloves of garlic (thinly sliced or minced)
  • 2 tbsp extra-virgin olive oil (optional: add butter)
  • 1/2 fresh lemon (juiced)
  • 1/4 tsp red pepper flakes (optional, for a “kick”)
  • Sea salt and cracked black pepper to taste
  • Optional garnish: Shaved parmesan or toasted pine nuts

Directions

  • The Microwave Steam
    • Place your broccoli florets in a microwave-safe bowl.
    • Add 2 tablespoons of water to the bottom.
    • Cover the bowl with a microwave-safe plate or a lid (left slightly cracked for steam to escape).
    • Microwave on High for 2.5 to 3.5 minutes.
      • Note: Aim for “bright green.” If they look dull or olive-colored, they are overcooked.
    • Carefully drain any excess water and set the broccoli aside for a moment.
  • The Flavor Infusion
    • Since the microwave doesn’t “toast” the garlic, you’ll want to do this quick step on the stovetop while the broccoli is steaming:
    • In a small skillet, heat 2 tbsp olive oil (+ butter, if using) over medium heat.
    • Add your garlic and red pepper flakes.
    • Sauté for only 1 minute until the garlic is fragrant and just barely starting to turn golden.
  • The Final Toss
    • Add the steamed broccoli directly into the skillet with the garlic oil.
    • Toss over medium-high heat for 60 seconds just to coat the florets and get a tiny bit of sizzle.
    • Remove from heat, squeeze your fresh lemon, and season with salt and pepper.
  • Serve with optional garnish – shaved parmesan or toasted pine nuts.
